Apple
and Goose Liver Sandwich
4 servings
4 red apples, such as Jonathans
2 tablespoons unsalted butter
1/2 pound goose liver (4 slices)
Salt and freshly ground white pepper to taste

Apples
Cut the apple horizontally into three parts to from rings. Remove
the cores. In a small frying pan, melt
1 tablespoon of butter and fry the apple rings for about 2 minutes,
turning, until lightly browned. (Do not cut the apples until ready
to fry.)
Goose Liver
1. Sprinkle the liver lightly with salt and pepper. In a frying
pan, melt the remaining tablespoon of butter and sauté the goose
liver slices for about 2 minutes. Transfer the slices to a roasting
pan and roast in a
preheated 350 °F oven for 3 or 4 minutes until they turn a golden
color.
2. Place one slice of liver between the top and bottom slice of
each apple.
To serve
Lay the remaining 4 center apple rings on a platter and
put the goose liver sandwiches next to them. Serve hot.
The harmonious balance of Hungarian goose liver and apples lends
this dish a delicate and interesting
